Restaurant owners and retail developers continue investing in rebuilding and modernization projects that combine operational upgrades with preservation of established brand identity and community presence.

Catalyst Construction, working alongside Peter Schwabe Construction, completed the reconstruction of Oscar’s Frozen Custard in the Waukesha-Brookfield market following a fire that destroyed the original facility in late 2024.

The restaurant reopened in May after approximately 18 months of demolition, planning and construction activities.

Rebuild Scope and Facility Enhancements

The reconstructed restaurant totals approximately 4,793 square feet and incorporates several operational upgrades intended to improve customer flow and long-term functionality.

New features include a double drive-through configuration, expanded outdoor seating areas and exposed timber truss elements extending nearly 40 feet at the roof peak.

Project teams also salvaged portions of the original slab and foundation for reuse during reconstruction activities. Construction progressed through winter weather conditions following demolition work that began in August 2025.

The interior design incorporated historical elements tied to the original restaurant, including recovered artwork and family-created displays connected to the business’s history in the community.

Mechanical and Refrigeration Coordination

The project included restoration and installation of specialized refrigeration, piping and cooling systems necessary for the restaurant’s frozen custard operations.

Catalyst Construction stated that coordination among mechanical trades and specialty contractors was required to support installation of the operational infrastructure while maintaining the project schedule.

The rebuild also reflects growing demand for reconstruction projects involving quick-service and hospitality facilities that require integration of modern building systems while preserving recognizable architectural characteristics.

Wisconsin Construction Firms Expand Restaurant and Retail Capabilities

Earlier in 2026, Peter Schwabe Construction joined Catalyst Construction, expanding Catalyst’s experience in retail and quick-service restaurant construction throughout Wisconsin and other regional markets.

Restaurant reconstruction and modernization projects continue generating opportunities for contractors specializing in phased construction, operational retrofits and hospitality facility upgrades.

Why It Matters

For restaurant owners, retail developers and contractors, reconstruction projects following catastrophic property damage increasingly involve balancing insurance-driven timelines, operational upgrades and customer expectations tied to established brands. The Oscar’s rebuild demonstrates how hospitality projects can incorporate expanded operational capacity and modern building systems while retaining features important to long-standing community identity.
